My husband built in box-like enclosures and finished it off to look like part of the cupboards. I cannot tell you how much valuable space this provided. We painted our cupboards and and the new additional, open storage to match. Good luck convincing your hubby, that convincing takes time and faith. :D I couldn't wait any longer and that's why I started doing it myself. <br />MDF would give you a nice, smooth finish that I'm sure you'll love. The important thing is to find a perfect match for the paint color you have on the cabinets.<br />I used joint compound and lots of sanding on those mdf edges.
